published on 20 December, 2022 at 13:59
This chocolate mug cake is made in the microwave for a fudgy, chocolaty treat that is truly decadent. Ready in less than 10 minutes!
INGREDIENTS
20 g (2 tbsp) oat bran
15 g (2 tbsp) coconut flour
10 g (1 ¼ tbsp) cocoa powder
15 g (2 tbsp) sweetener of choice
1 tsp (2 g) baking soda
70 g (1 small) banana
60 ml (¼ cup) milk
30 ml (2 tbsp) coffee
1 cube of dark chocolate
50g (⅓ cup) milk chocolate
30 ml (2 tbsp) milk
METHOD
1. In a medium bowl mash banana until puree forms. Add coffee and milk, and whisk to combine.
2. In another bowl whisk your dry ingredients: flour, oat bran, cocoa, sweeter and baking soda. Combine wet and dry ingredients and whisk until smooth batter forms.
3. Brush a mug with vegetable oil and pour ½ of the batter in. Add a cube of chocolate and pour the leftover batter on top. Make sure that the batter fills the cup no more than ⅔ of the way.
4. Microwave on HIGH for 1-2 minutes, keeping an eye on it.
5. In a small bowl melt milk chocolate with 2 tbsp of milk.
6. Carefully remove the cake from the mug and pour chocolate ganache on top.
