Zucchini medallions: a great side dish to prepare right now!

Just a few ingredients to make a delicious dinner for the whole family! 

INGREDIENTS
1kg Zucchini
400g Chicken breasts
8g (2 tsp) Salt
4g (1 tsp) Pepper
Oil
3 Eggs
100g (3/4 cup) Flour
50ml (1/5 cup) Milk
150g (3/4 cup) Cheese
 
METHOD
  1. Peel and cut the zucchinis. Take out the middle of each slice and put it in a grinder.
  2. Grind it along with the chicken breasts. Put it in a bowl and add salt and pepper.
  3. Fill the zucchini rings with chicken mixture.
  4. In another bowl put eggs, salt and milk and whisk it.
  5. Cover the zucchini medallions with flour, then with eggs mixture and put them into an oiled pan. Fry them. Add grated cheese.
  6. Bake on 180C for 10 minutes. Serve.
