Baked breaded zucchini roll-ups: a fun and healthy way to eat your veggies!

INGREDIENTS
 1 large zucchini;
 ham, sliced;
 cheese, sliced;
 olive oil;
 breadcrumbs;
 salt and pepper.
 
METHOD
  1.  Preheat oven to 180C/350F.
  2.  Using mandolin or a sharp knife slice zucchini thinly. Dip each slice into olive oil, cover with breadcrumbs and bake for 20 minutes.
  3.  Season strips from both sides and place sliced cheese and ham on top. Roll and secure with toothpicks.
  4.  Bake for 10 minutes more or until cheese is nice and melted.
