Baked breaded zucchini roll-ups: a fun and healthy way to eat your veggies!

INGREDIENTS
1 large zucchini;
ham, sliced;
cheese, sliced;
olive oil;
breadcrumbs;
salt and pepper.
METHOD
- Preheat oven to 180C/350F.
- Using mandolin or a sharp knife slice zucchini thinly. Dip each slice into olive oil, cover with breadcrumbs and bake for 20 minutes.
- Season strips from both sides and place sliced cheese and ham on top. Roll and secure with toothpicks.
- Bake for 10 minutes more or until cheese is nice and melted.
