1. Cheesy beef roulade
INGREDIENTS
500g ground beef
salt
pepper
40g Parmesan cheese
1 egg
parsley
breadcrumbs
ham
cheese
METHOD
1. Mix together the meat, salt, and pepper. Add the egg, Parmesan cheese, and spices.
2. Spread out the ground beef and cover it with provola cheese and ham.
3. Roll it up and refrigerate for two hours.
4. Slice the roulade and bake at 180°C for 30 minutes.

2. Ground beef pie
INGREDIENTS
600g ground beef
2 eggs

the crumb of two slices of bread
150g ham
150g provola cheese
METHOD
1. Season the ground beef with salt, pepper, parsley, mix in 2 eggs, Parmesan cheese and the bread crumb.
2. Put half of the mixture into a cake pan and flatten it well. Fill with ham and provola cheese.
3. Cover with the rest of the ground beef.
4.Dust with some breadcrumbs and bake at 180°C for 40 minutes.

3. Italian stuffed flank steak
INGREDIENTS
2 garlic cloves, minced
1 shallot, very finely chopped
2 tbsp fresh parsley leaves, finely chopped
1 tsp sage leaves
2 tbsp olive oil
1 steak flan (about 800g)
4 oz prosciutto
4 oz provolone
8 - 12 wooden sticks soaked in water
Salt and ground black pepper
METHOD
2 garlic cloves, minced
1 shallot, very finely chopped
2 tbsp fresh parsley leaves, finely chopped
1 tsp sage leaves
2 tbsp olive oil
1 steak flan (about 800g)
4 oz prosciutto
4 oz provolone
8 - 12 wooden sticks soaked in water

METHOD
- Mix the garlic, shallots, parsley, sage and olive oil in a small bowl.
- Cut the steak in the Butterfly and pound it into a rectangle.
- Evenly distribute the mixture of herbs on the surface of the steak.
- Put the prosciutto evenly over the steak, leaving a 2-inch border along the top edge. Cover the prosciutto with an even layer of cheese, leaving a 2-inch border along the top edge.
- Starting from the bottom edge and rolling away from you, roll the beef and place it on the cutting board seam side down.
- Using a knife, cut between 2.3 cm thick pieces of twine. Season lightly with salt and black pepper.
- Bake at 180°C/360°F for about 20 minutes.
4. Potato and meatballs pie
INGREDIENTS
For mashed potatoes:
• 700 g of potatoes
• 30 g butter + 10 g grease pan
• 1 egg yolk
• 50 g cheese
• ½ tsp salt
• ½ tsp Provence herbs
For meatballs:
• 300 g ground beef
• 1 onion
• 50 grams of cheese + 50 grams cheese for the topping
• ½ tsp salt
• ½ tsp sweet paprika
• ½ teaspoon curry
• 20 g of dill
METHOD
1. Cook the potatoes
2. Mash and add the yolk and butter, mix
3. Add cheese, salt, herbs.
4. Mix all the ingredients for the meatballs in another bowl.
5. Form 7 balls of potatoes (hand sprinkled with flour)
6. Form 7 large meatballs
7. Brush the baking mold (22 cm) with butter and put potato balls inside
8. Press the center of the potato ball with the glass in, put the meatball inside and bake 200C/400F for 30 minutes
9. Sprinkle with cheese and bake again for 5 minutes (to melt the cheese)
