Triangle cookies

Ingredients:
300 g (10 oz) flour;
200 g (7 oz) cottage cheese;
100 g (3.5 oz) butter, room temperature;
1 egg;
1/2 tsp vanilla sugar;
100 g (3.5 oz) sugar.

1/2 tsp vanilla sugar;
100 g (3.5 oz) sugar.
Instructions
Blend cottage cheese, butter, egg, vanilla sugar and regular sugar together until smooth.
Add flour and stir to make a smooth but slightly sticky dough. Leave the dough in fridge for 30 minutes.
Divide the dough in half. Roll each half out and cut rounds using regular glass. Use the dough scraps to make more cookies.
Place cookie round in a bowl of sugar, fold in half (sugar side in), put in a sugar one more time and fold again (sugar side in). Finally cover one side of triangle with sugar and put on a parchment covered baking sheet (sugar side up).
Bake at 190C/375F for 20 minutes.
