Grating a potato is all it takes: the recipe for Rostì

INGREDIENTS FOR 3 STUFFED ROSTì500g potatoes
1 tablespoon Parmesan cheese
1 tablespoon potato starch
cheese
speck ham
DIRECTIONS
Clean and peel your potatoes, then grate them with a wide hole grater. Rinse and dry the shredded potatoes and add the potato starch, Parmesan cheese, salt, and pepper. If the mixture feels too hard, add about 30g of butter or a tablespoon of oil. Make round fritters and cook in a pan for 6/9 minutes on each side until they turn golden brown. Stuff with speck ham and cheese and bake for a few minutes until the cheese melts. Serve hot and enjoy!
