Stuffed eggplant medallions: a unique recipe for a spectacular dinner!

INGREDIENTSround eggplant
basil
salt
pepper
olive oil
300g ground meat
1 egg
70g Parmesan cheese
shredded mozzarella
DIRECTIONS
Slice the eggplant into 1 cm slices, use a glass to cut a hole in the center of each slice. Dice the center part that has just been removed from the eggplant slice, and let it cook in a pan with some olive oil. Next, prepare the filling by combining the ground meat, salt, pepper, 1 egg, Parmesan cheese, shredded mozzarella. Mix everything together well and use the mixture to fill the holes made in the eggplant slices. Dip each slice in olive oil first, and then cover in breadcrumbs. Bake for at least 30 minutes.
