Clever fruit pie: a delicious dessert that’s ready in no time!

INGREDIENTSfor the crust:
2 eggs
salt
100g sugar
150g flour
50ml milk
50ml vegetable oil
8g baking powder
for the custard:
400ml milk
100ml whipping cream
150g sugar
35g flour
5 egg yolks
lemon peel
Beat together the egg yolks and the sugar, add the flour. Heat up the milk and whipping cream, add the lemon peel and let it infuse. Once the milk comes to a boil, remove the lemon peel and add the egg mixture. Stir vigorously until the custard is the right consistency and let it cool. Once cooled spread the cream onto the pie crust.
DIRECTIONS
Beat the eggs together with a pinch of salt and the sugar, add the oil, milk, gradually add the sifted flour, add the baking powder last. Mix everything together and pour the batter into a pie dish and bake it for 20 minutes. Pour the custard onto the cooled pie crust, and decorate with your favorite fruit. To make the fruit glisten brush it with some apricot jam.
