Cheese Stuffed Potato Toasts

Ingredients:
1kg Potatoes, cooked either naked or boiled is fine
4 Tablespoons of breadcrumbs, plus extra for coating
Olive oil
1 egg
Salt to taste
1 Tsp Dried Thyme
80g Mozzarella Cheese
Instructions:
Remove the cooled cooked potatoes from the skins.
Mash the potatoes well
Add the egg, olive oil and the breadcrumbs, Chives and salt and mix well.
Divide the mixture in to eight.
Dust your work surface with breadcrumbs
Take one portion and form by hand in to a square, repeat so that you have for 4 portions.
Top 4 of the patties with the mozzarella cheese that you have cut into 4 squares
Make another four potato squares and top each pattie.
Pinch together the edges.
Dust the top with breadcrumbs.
Cook in a medium griddle pan for 5 minutes and then flip and cook for another few minutes.
