Baklava ice cream

INGREDIENTS
400g pistachio ice cream
400g pistachio ice cream
150g pistachios
50g hazelnuts
1 tsp cinnamon
2 tbsp sugar
150g melted butter
10 sheets filo pastry
2 tbsp honey
50g hazelnuts

METHOD
Crush the nuts, cinnamon and sugar in a food processor.
Cut the filo pastry into 10cm x 10cm squares.
Grease a baking tray with melted butter.
Place a filo sheet in a baking tray. Brush with butter, top with another filo sheet, then brush with the butter. Repeat 6 times, then sprinkle the top with the chopped nuts.
Top with a 3 sheets of buttered filo and with a final sprinkling of the chopped nuts.
Bake for 15 minutes at 180°C/350°F.
Cut an ice cream into 10cm x 10cm squares. Create a sandwich with baklava and ice cream.
Drizzle with honey and sprinkle with pistachios.
