Salted Caramel Ice Cream Cones

Ingredients:
550ml Cream
1 Tsp Salt
225g Sugar
65ml Water
50g Golden syrup
65ml Butter
170ml Irish Cream
1 Tbsp Vanilla Extract
125g Chocolate
1 Tbsp Coconut Oil
Ice Cream Cones
 
Instructions:
Take 200ml of the cream and add 1 tsp of salt and then microwave for 2 minutes to warm and  dissolve the salt.
Meanwhile add the sugar, water and golden syrup in to a pan and bring to a boil cooking until a dark golden brown.
Remove from the heat and add in the cream and salt mix, the butter and 50ml of the Irish cream, mix and allow to cool.
Take the remaining 350ml of cream 120ml of Irish cream and vanilla extract and whisk to soft peak stage.
Pour this mix into a 1.5kg loaf tin and drizzle over the caramel.
Swirl with a skewer then freeze overnight.
About an hour before serving melt the chocolate and coconut oil together in the microwave fro a couple of minutes.
Pour a little of the chocolate into the base of each ice cream cone.
Scoop in the ice cream to the ice cream cone and freeze for 20 minutes.
Re melt the chocolate and pour over the ice cream to create a chocolate shell and again freeze for 20 minutes before serving.
