INGREDIENTS

For the shortcrust pastry:

310g (2 1/2 cups) of all-purpose flour

160g (3/4 cup) of sugar

4g (1/4 tbsp) of baking powder

a pinch of salt

110g (1/2 cup) of butter

1 egg

1 egg yolk

Vanilla essence

Apricot jam

METHOD

1. In a mixing bowl, add the flour, sugar, baking powder, and a pinch of salt and mix. Add the butter and mix with your fingers to dissolve it. Add the egg, egg yolk, and vanilla essence and knead to obtain a compact dough. Wrap the dough in cling film and transfer it to the fridge for 30 minutes.

4. After elapsed, transfer the dough to the working surface and cut 1/3 of the dough.

5. Roll out the dough and transfer it to the cake mold (22cm - mold size) with the help of the rolling pin.

6. Press the dough well on all sides and remove the excess pastry. Prick the dough with a fork.

7. Pour the jam into the cake mold with the pastry and level it up with the spoon.

8. Roll out 1/3 of the dough and cut it with the pastry cutter to obtain the strips.

9. Place the strips on top of the cake to make a nice decoration. Transfer to the oven and bake at 180°C/360°F for 35 minutes.

10. Transfer the cake to a serving dish after baking, cut a slice, and serve.
