How to make meat softer while cooking

Cooking meat, especially on grills or barbecues, can be very hard since it's easier to underestimate some details and your meat isn't the best. 
 
In particular, one of the most common concerns while cooking meat is to keep it tender and juicy. 
 
So let's see some little advice to keep in mind to cook meat at best. 
 
1. Time and temperature: this two factors are equally important when it comes to cooking meat. Longer time periods and lower temperatures are useful so that the meat is soft, juicy and easy to chew. 
 
2. Marinating: this operation before cooking contributes to make meat juicier and savory, especially if it's "sour" meaning it includes citrus, whine and vinegar. 
 
3. Tenderize the meat: if you have a meat tenderizer or not, it's always advisable to tenderize the meat before cooking it. Put the meat between two plastic wrap or baking paper sheets and go for it. You can also use a sauce pan, a rolling pin or any other object heavy enough. 
 
4. Salt: salt is an important ingredient too for meat tenderness. You can season meat with salt only at the end of cooking time, not while still cooking it. However, you can use salt also before cooking meat: especially for bigger pieces, cover them with salt and let rest for about an hour. You only have to rinse the meat to get rid of excess salt before cooking it as you prefer. 
 
5. Slices: if you want a softer and tender meat, make sure to cut it in thin slices. This way you can avoid making it stringy. 
 
6. Baking soda: this ingredient allows you to make meat tender without altering its taste. After some minutes of cooking time, add a teaspoon of baking soda for every 500 g of meat.
