How to store fresh carrots properly

Carrots are amongst the most versatile vegetables in the kitchen: from soups to desserts, from sauces to side dishes they contribute to give taste and color to our meals. For this reason it's always good to have them.
But if they're not stored properly they can go bad in a very short time.
Let's see how to avoid it and always have them fresh.
1. Purchasing: it's important to take a look at the product the moment you buy it. Carrots must be bright orange and if there are leaves they should also be bright green. Consistency must be firm and leaves must not look wilted.
2. In the fridge: if you want to cook them within a few days, carrots can be placed in the fridge or even in the pantry if it's away from heat sources. Ideal place it's in the fridge vegetables drawer, maybe in a plastic bag.
3. For longer: if you want to store them longer, you can use the freezer, both raw or cooked.
In the first case carrots must be properly clean and dry. You can also choose from freezing them as a whole or in pieces, according to your needs.
Or else, you can boil them for 5 minutes, drain them and let them cool completely before freezing them into freeze bags.
4. A tip: to avoid them sticking to each other once they're frozen, you can place them in a tray in pieces well distanced from each other and freeze them for about 30 minutes. After that you can portion and divide them into freeze bags.
