How to store olives: 3 ways to always have them ready to taste

Olives are very common in cooking, as they are versatile and adaptable to a lot of recipe to enrich their flavor.
To store them and always have them available all the year there are very simple preservation methods.
Let's see how to do.
In brine
1. Only take whole and mature olives, then soak them into water and salt for 40 days changing water once a week.
2. Then make the brin boiling 1 l of water with 100 g of salt.
3. Put the olives in sterilized glass jars and add aromatic herbs such as rosemary, thyme or laurel.
4. Cover with still hot brine and close the jars creating vacuum.
In salt
1. Wash and dry olives.
2. Place them in glass jars alternating them with layers of coarse salt until you fill the whole jar. Make sure to finish with a layer of salt.
3. Close hermetically.
4. After 20 days the olives will be ready to eat after desalinating and seasoning them.
In oil
1. Make the same process for olives in salt.
2. After 10 days rinse the olives and put them in new glass jars.
3. Season with garlic, chili pepper, thyme and other aromatic herbs you prefer.
4. Cover with oil until you reach the jar edge, then close hermetically.
