Quick quesadillas: they are ready in a few minutes!

INGREDIENTS
2 tortillas
4 eggs
1/3 tsp salt
3 tbsp chopped green onion
100g shredded Mozzarella cheese
 
METHOD
  1. In a bowl mix together eggs with salt and chopped green onion.
  2. In the pan fry 1/2 of the egg mixture and top with tortilla, sprinkle with shredded cheese, and cover one half with the other.
