Blueberry donut: soft and tasty, perfect for your family dinner!

A soft cake that everyone will love!

INGREDIENTS

5 egg yolks;

25 g (2 tbsp) sugar;

45 ml (3 tbsp) vegetable oil;

100 g (½ cup) blueberries;

100 g (⅔ cup) all-purpose flour;

5 egg whites;

1 tsp lemon juice;

40g (3 tbsp) sugar.

METHOD

Beat blueberries with sugar, oil and yolks until smooth. Add flour and mix to combine.
Beat egg whites with lemon juice until soft peaks form. Start adding sugar until a glossy egg white mixture forms.
Fold egg whites into the blueberry batter.
Pour the batter into a bundt cake pan and bake at 160C/320F for 15 minutes.
Make 5-6 slits on the surface of the cake and return into the oven for 60 minutes at 140C/290F.
