Chicken omelette roll: perfect for a delicious lunch!

INGREDIENTS

600g (5 cups) minced chicken;

1 onion, pureed;

1/4 cup dill and parsley, chopped;

Salt and pepper to taste;

60ml (1/4 cup) cold water;

350g (3 1/2 cup) shredded cheese;

5 eggs;

100g (2/3 cup) sour cream;

2 tsp semolina.

METHOD

Preheat oven to 200C/400F. Cover baking sheet with parchment paper.
Whisk eggs, sour cream, cheese, salt and pepper.
Pour egg mixture onto a baking pan, spread evenly and bake for 15-18 minutes.
Combine minced chicken with salt, pepper, greens, water and onion.
Spread chicken mixture on top of the cheese layer (while it is still hot) and roll using parchment paper.
Bake for 35 minutes at 180C/350F.
