Cheesy cabbage omelette: a healthy option for brunch or lunch

This is absolutely delicious and so easy to make!
INGREDIENTS
INGREDIENTS
1 small head white cabbage;
1 small onion;
Salt and pepper to taste;
3 eggs;
80 g (3/4 cup) flour;
Shredded cheese.
METHOD
- Shred cabbage and slice onion thinly.
- Mix onion and cabbage with salt, pepper, eggs and flour to make a smooth batter covering vegetables uniformly.
- Heat some vegetable oil in a non-stick pan over medium-low heat. Pour cabbage batter and spread it into an even layer. Cover pan with a lid and let cook for 10 minutes over the low heat.
- Flip pancake on the other side using a large spatula. Continue cooking for 10 minutes more.
- Top with cheese, let it melt and serve right away.
