Keto bacon rolls: quick and delicious!

Perfect for keto diet!
INGREDIENTS
Pastry:
65 g cream cheese
250 g grated mozzarella
1 ½ tbsp baking powder
2 eggs
150 g almond meal
250 g grated mozzarella
1 ½ tbsp baking powder

Filling:
50 g grated cheese
100 g cooked bacon
50 g grated mozzarella
100 g cooked bacon
50 g grated mozzarella
METHOD
- Place the grated cheese with cream cheese in a bowl. Microwave for 2 minutes until melted, then mix well. Add the eggs, baking powder and mix. The mixture should foam. Then add the almond meal and form a dough.
- Place the dough on top of a silicone mat, then place a piece of cling film on top. Flatten into a rectangle with a rolling pin.
- Top with grated cheese, bacon, and mozzarella. Use the silicone mat to roll up the dough. Cut into 1.5-2cm pieces and place on a baking tray.
- Bake for 20 minutes at 180ºC (356ºF).
