METHOD

25 g (0.8 oz) fresh yeast;

1 cup warm milk;
40 g (1.4 oz) sugar;
½ tsp vanilla powder;

1 lemon, zest;
500 g (1 pound) flour+for dusting;
a pinch of salt;
mixed chocolate.
METHOD

- Mix yeast and ½ of sugar with a fork to make a paste.
- Melt butter with milk, leave to cool down until lukewarm and combine half of the liquids with yeast paste.
- Set the yeast aside to activate, meanwhile whisk the flour with salt, zest and vanilla powder.
- Separately whisk leftover butter and milk mixture with eggs.
- Pour yeast mixture and egg and milk mixture into the flour. Combine everything with a wooden spoon and set the dough aside until doubled in size.
- Cut the dough in half on a generously floured working surface. Roll each part out. Place chocolate squares on top of one layer of the dough that was brushed with some milk. Cover with another layer of dough, press to remove excess air and cut the donut out.
- Set the donuts aside for 15 minutes.
- Fry in preheated oil for 5-6 minutes.

• 500g ricotta
• 150g icing sugar
• 1 pinch cinnamon
Decorate:
• sugar
• cinnamon
•sunflower oil

METHOD
- Knead the dough. Let rise for 1.5 hours.
- Pour ricotta, sugar and a pinch of cinnamon into a bowl. Stir the cream thoroughly with a whisk.
- Divide the dough into buns of 90g each.
- Roll each loaf into a round shape and in the center add a spoonful of ricotta cream.
- Lubricate the edges with clean water, then close them well to form a crescent moon.
- Fry the cassatelle. Put them on a plate covered with paper towels, and then transfer them back to the container with sugar and cinnamon inside.
