Dark chocolate and cream squares: a dessert to die for!

Easy, beautiful and delicious, how to make an amazing dessert in no-time!
INGREDIENTS
For the cake:
6 egg whites;
90 g (3 oz) sugar;
90 g (3 oz) flour;
½ tsp baking powder;
120 g (4 oz) dark chocolate, shredded;
a pinch of salt.
For the cream:
6 egg yolks;
100 g (3.5 oz) sugar;
2 cups milk;
50 g (1.7 oz) cornstarch;
½ tsp vanilla powder;
2/3 cup full-fat cream, whipped.
For the glaze:
80 g (2.8 oz) dark chocolate, chopped;
30 ml (1 oz) hot milk;
30 ml (1 oz) melted butter.
METHOD
- Start with a cake. Cover standard baking sheet with parchment and brush with vegetable oil. Preheat oven to 180C/350F.
- Whip egg whites with some salt and sugar until stiff peaks form. Whisk baking powder with flour. Fold in flour mixture and shredded chocolate into fluffy egg whites, trying to save as much air as possible.
- Spread airy batter over the prepared baking sheet and bake for 6-8 minutes, until slightly golden on top. Set aside to cool down, remove the parchment.
- For the custard cream whisk egg yolks with sugar, vanilla and cornstarch. Heat milk and pour it into the egg yolks mixture, while whisking constantly. Cook over medium-low heat until thickens (around 10 minutes).
- Pour custard into a plate, cover with plastic and set aside to cool down completely.
- Beat full-fat cream and fold it into the custard.
- Cut cake layer into 3 equal rectangles, cover each one with cream and layer on top of one another.
- Pour hot milk and butter over chocolate, set aside for a minute then stir. Cover the top of the cake with glaze.
- Slice the cake into 8 squares and decorate to your taste.
