Tuna stuffed peppers: a quick and easy meal that is sure to please the whole family!

INGREDIENTS
3 bell peppers;
3 slices bread;
2 cans of tuna, drained;
1 egg;
2 tbsp parsley, chopped;
2 garlic cloves, minced;
2 tbsp capers, chopped;
2 tbsp olive oil.
METHOD
- Remove stem and seed from each bell pepper.
- Combine tuna with bread, egg, parsley, oil, garlic and capers. Mash with a fork to form a smooth puree.
- Fill each bell pepper with tuna and fry over medium heat from all sides until golden (3-4 minutes). Add some water and cover with a lid. Steam for 10 minutes and serve.
