Pineapple and cherries upside down cake:
THE INGREDIENTS:
3 eggs
300g flour
250g sugar
1 packet of baking powder
100ml pineapple juice
100ml milk

DIRECTIONS:
Beat the eggs with a pinch of salt and the sugar, add the milk, pineapple juice and sifted flour. Mix the ingredients well and add the baking powder. In the meantime, butter a bundt cake pan, pour in the brown sugar and add the slices of pineapple alternating with the cherries in syrup. Pour the mixture over the fruit, bake at 180°C for 40 minutes. Flip the cake over once it has cooled down and your awesome upside down bundt cake is ready.

Cherry Clafoutis:

DIRECTIONS
Choose the ripest cherries, wash them and remove the pits. In a separate bowl mix together the sugar and the eggs. Once the sugar and eggs are mixed together thoroughly, gradually add the flour and the previously warmed milk (warm, not boiling). Carefully pour the batter over the cherries. Bake at 190°C for 35 minutes.

Galette des Rois with custard:
Galette des Rois is a French pastry that celebrates the holiday of the Epiphany, to celebrate the arrival of the Three Kings. It’s a simple cake, beautiful and filled with an almond cream. We chose to fill it with custard and black cherries. Here is what you need to make this dessert: 2 sheets of puff pastry, 10 black cherries in syrup, custard. For the custard: 400ml milk, 100ml whipping cream, 150g sugar, 35g flour, 5 egg yolks and lemon peel. Beat the yolks with the sugar, add the flour. Warm the milk and the whipping cream and let it infuse with the lemon peel. Remove the lemon peel and add the egg mixture when the milk starts boiling. Stir vigorously until the cream is formed. Let it cool. Once cooled spread the cream on a sheet of puff pastry, add the cherries and cover with the other sheet of puff pastry. Brush with egg wash (yolk) and decorate as you prefer.
