Zucchini rolls

Ingredients:
250 g (1/2 pound) cooked chicken, shredded;
½ white onion, chopped;
½ bell pepper, chopped;
1 tbsp jalapeno, minced;
2 cups sharp cheese, shredded;
1 tsp garlic powder;
1 tsp paprika;
1 tsp chili powder;
1 cup enchilada sauce;
2 zucchinis.

Instructions
Preheat your oven to 200C (400F).
Slice zucchinis into thin strips using mandoline.
Combine shredded chicken with onion, bell peppers, jalapeno, ½ of the cheese and spices, Pour enchilada sauce over and stir to combine.
Place about 2 tbsp of chicken filling on a zucchini strip and roll it tightly.
Put rolls in a parchment covered spring form, sprinkle leftover cheese on top and bake for 20 minutes.
