Zucchini roll with cheese and smoked salmon

INGREDIENTS:

- 4 zucchini
- Olive oil
- Salt and pepper
- 3 eggs
- 2 tbsp fresh cream
- 50 g flour
- 3 egg whites
- Cheese garlic & herbs
- A few slices of smoked salmon

PREPARATION:

1. Grate your zucchini with a mandolin.
2. Pour an olive oil into your pan and fry your grated zucchini. Season with salt and pepper and put out of heat when zucchini are cooked.
3. In a salad bowl, beat the eggs with the fresh cream and the flour, then gradually incorporate your egg whites and mix.
4. Finally, add your grated zucchini and mix.
5. Pour mixture into a baking dish and spread well.
6. Put in the oven for 20-25 minutes at 200 ° C.
7. Cover cream cheese. Spread everything and finally cover with slices of smoked salmon.
8. Cover with plastic wrap and cool for 1 hour.
9. Cut the roll before serving.
