500 gr all-purpose flour
265 ml water (room temperature)
Filling:
500 gr ground lamb leg
4 tablespoons Shaoxing wine
4 tablespoons light soy sauce
1 tablespoon dark soy sauce
2 tablespoons peanut oil (or vegetable oil)
10 gr minced ginger
1/4 teaspoon Sichuan peppercorn powder
1/4 teaspoon salt
80 gr zucchini
200 gr carrot
80 gr chopped green onion
Directions:
Pour the water on the flour and mix well. When the dough is uniform let it rest for 2 hours.
Filling: mix the meat with Shaoxing wine, light soy sauce and dark soy sauce. Grate zucchine and carrot and mix all together, add oil, ginger, salt and green onion.
Make the dumplings as the video shows and cook in boiling water.
