Baked Spaghetti Squash with Italian Meat Sauce

Total Time: 50 minutes
Ingredients:
2 tsp olive oil
1 spaghetti squash (about 3 lbs)
1 lb ground beef
1 yellow onion, diced
1 can (15 oz) tomato puree
1/2 tsp garlic powder
1/2 tsp dried basil
1/2 tsp dried oregano
1/4 tsp salt
1/2 tsp black pepper
1 cup shredded mozzarella
Garnish: chopped parsley
Method:
1.Preheat oven to 400 degrees.
2.Cut squash in half and scoop out the seeds. Brush the inside of both halves of the squash with olive oil. Season with salt and pepper.
3.Place two halves cut side up on a baking sheet. Roast squash until fork tender, approximately 30 minute. Allow to cool slightly.
4.Using a fork, scrape up the insiders of the squash to create “spaghetti”. Leave the insides in the squash halves.
5.Heat oil in a medium skillet over medium-high heat. Add onions and cook until tender, approximately 5 to 6 minutes.
6.Stir in the ground beef and cook until browned, breaking the meat up into crumbles, approximately 5 to 8 minutes.
7.Stir in tomato puree, garlic powder, dried basil, dried oregano, salt and pepper. Bring to a simmer.
8.Top the squash halves with the tomato and beef mixture. Sprinkle cheese evenly over the two halves.
9.Bake until the cheese is melted and bubbly, approximately 5 minutes.
10.Sprinkle with parsley and serve.
