Pretzel bites: how to make them puffy and fragrant!

INGREDIENTS
180ml (3/4 cup) of water
7g of dry yeast
10g (3/4 tbsp) of light brown sugar
10g (3/4 tbsp) of butter (melted)
250g (2 cups) of flour
Salt
120g (1/2 cup) of baking soda
Egg for egg wash
Coarse salt
METHOD
1. In a bowl add the water, yeast, sugar, and whisk. Add the butter, flour, and salt and mix with the spatula. When dough starts to form knead it with hands to obtain smooth dough. Cover with cling film and let it rise for 1 hour.
2. After time has elapsed transfer the dough to the working surface and split it into three pieces.
3. Roll out each piece with your hands and cut it into small portions. Transfer them to the baking tray covered with parchment paper and cover with cloth. Let it rise for 30 minutes.
4. In a pot with boiling water add the baking soda and transfer the small dough pieces. Let them boil for 10-15 seconds and then remove from the water.
5. Arrange them on a baking tray covered with parchment paper. Brush with egg and sprinkle with coarse salt. Bake in oven at 190°C/374°F for 20/25 minutes.
6. Serve pretzel bites all together on a serving plate and enjoy.
