Pretzel bites

Ingredients:
For the dough:
2/3 cup warm water;
1 tbsp sugar;
1 ¼ tsp dry yeast;
45 g (1 ½ oz) butter;
1 tsp salt;
2 ¼ cup flour.
For boiling:

For the sauce:
½ cup baking soda.

¼ cup butter;
2 tbsp flour;
½ cup milk;
1 ½ cup cheese, shredded.

Instructions
Add sugar and yeast into warm milk and stir to combine. Set aside for 10 minutes.
Mix flour and salt together. Pour in melted butter and yeast solution.
Knead the dough until smooth and set aside to rise for about an hour or until doubled in size.
Preheat oven to 220C/430F. Cover baking sheet with parchment paper.
Boil water with baking soda.
Divide the dough until halves or quarters, roll into a rope and cut the rope into bite-sized pieces.
Boil pretzel bites in soda solution for 30 seconds, then transfer onto a parchment lined baking sheet, brush with egg wash, sprinkle with salt and bake for 15-18 minutes.
Meanwhile make cheese sauce by combining flour with melted butter and cooking it on low for about 30 seconds. Start pouring milk slowly to prevent lumps. Add shredded cheese in portions, whisking in-between until cheese has melted completely.
Serve warm pretzel bites with cheese sauce right away.
