Cheesecake bites

Ingredients:
1/3 cup blueberries;
1/3 cup melted white chocolate;
5 digestive biscuits;
½ cup granola;
¼ cup butter, melted;
200 g (7 oz) cream cheese;
150 g (5 oz) mascarpone;
100 g (3.5 oz) powdered sugar.

Instructions
1. Blend biscuits, granola and butter together until crumbs form.
2. Separately blend cream cheese, mascarpone and powdered sugar until smooth.
3. Fill a pastry bag with cheese mixture.
4. Fill one half of an ice tray with blueberries and the other half with melted white chocolate. Top
with cheese mixture and freeze for an hour.
5. Cover frozen cheesecake bites with cookie and granola crumbs packing it tightly. Freeze for 1
hour more.
6. Remove cheesecake bites from the tray and let sit for 10-15 minutes at room temperature
before serving.
