Fake olives: a recipe that will impress everyone!

INGREDIENTS
300/400g of whole green olives in brine.
For 200g of olive juice
1.5g of calcium lactate.
1g of xanthan gum.
For the alginate bath.
2,5g alginate.
500g water.
For the aromatic oil.
Star anise to taste
Garlic to taste
Lemon peel to taste
1 chili pepper.
METHOD
1. Start by taking the alginate bath, blending the alginate and water, because it will need to rest for at least 2 hours to make the air bubbles go away.
2. Then put the pitted green olives and the blender in a container, when they are finely chopped, put them in a cotton cloth, and straighten them well so that all the olive juice comes out.
3. Add the calcium lactate and xanthan gum to the juice and blend again.
4. Now take a 5ml dispenser and dip it in the olive juice, then gently put it in the alginate bath and leave it inside for 3 minutes, wash it and rinse it in a bowl with water, then dab, and here is the fake olive, as soon as it will burst in your mouth, if you like, you can serve them whole of a jar with olive oil, and spices, so that they look like real olives in oil!
