Pumpkin fries: the secret to making them crunchy like french fries!

A delicious side dish that the whole family will love!
INGREDIENTS

100g (⅔ cup) breadcrumbs;
25g (4 tbsp) parmesan cheese;
1 tsp paprika;
1 tsp dry thyme;
¼ tsp nutmeg;
Salt and pepper;
1 medium pumpkin or butternut squash
Olive oil to coat.

METHOD
- Peel and cut the pumpkin into fries.
- Combine breadcrumbs with paprika, parmesan, thyme, and nutmeg.
- Mix pumpkin with some olive oil, salt, and pepper.
- Dredge pumpkin fries in breadcrumb mixture and place on a baking sheet.
- Bake for 20 minutes at 200°C/400°F.
