Pan d'arancio: the Sicilian recipe for a soft and fragrant pound cake

Fluffy and super delicious!
INGREDIENTS
For the batter:
1 orange
3 eggs
220g (1 cup) of sugar
270g (2 cups) of flour
16g (1 tbsp) of baking powder
For decoration:
1 orange
120g (1/2 cup) of sugar
240ml (1 cup) of water
METHOD
1. Cut the orange into small pieces and add them to the food processor and mix well.
2. In a bowl add the sugar and eggs and mix with the electric mixer until the sugar dissolves. Add the orange puree, flour, and baking powder and continue with mixing until all is well combined.
3. Pour the mixture into the cake mold (25x10cm - mold size) lined with parchment paper. Transfer to the oven and bake at 180Β°C/360Β°F for 40 minutes.
4. Cut the orange into slices and arrange them on the pan. Add the sugar and water and let it cook until the oranges are caramelized.
5. Unmold the bread after baking, arrange the caramelized oranges on top, and brush the surface with the caramelized sugar. Cut on slices and serve.
