1 Potato and onion omelette
INGREDIENTS
olive oil
3 potatoes
1 onion
6 eggs
salt
pepper
ham
cheese
METHOD
1. Cook the potatoes with the onion in a pan for about 15 minutes.
2. Beat the eggs, add salt, pepper and then the potatoes semi mashed.
3. Cook the egg mixture in a pan, put in the center ham and cheese.
4. Fry 10 minutes for each side.

2 Potato cordon bleu
INGREDIENTS
boiled potatoes
salami
provola cheese
breadcrumbs
pepper
salt
pecorino cheese
egg wash
METHOD
1. Slice a boiled potatoes.
2. Dip the potato slices in the egg wash and then cover them with seasoned breadcrumbs.
3. Fill two slices of potatoes with salami and provola cheese.
4. Drizzle with olive oil and bake at 200°C for 15 minutes
5. Serve warm.

METHOD

3 Mashed potato pancakes
INGREDIENTS
600g potatoes
80g parmesan cheese
salt
pepper
1 tbsp olive oil
190g flour
ham
cheese
METHOD
1. Boil the potatoes or cook them in the microwave for about 10 minutes. Mash the potatoes and add the flour, and the Parmesan cheese, salt and pepper.
2. Spread out the mixture on a sheet of parchment paper and cut out some circles. P
3. Place cheese and ham on one circle and then cover it with another circle.
4. Pour some olive oil in a pan and cook each pancake for 5 minutes on each side.
5. Your potato pancakes are ready to serve!

4 Easy one skillet scalloped potatoes
INGREDIENTS

METHOD
1. Peel the potatoes and cook them in a microwave or boil them in some water for 9 minutes.
2. Let them cool and then slice them. In a pan, add a layer of butter, potatoes, salt, pepper, zucchini, and cheese. Continue in this order until the dish is filled.
3. Top it off with one more layer of potatoes, and plenty of Parmesan cheese.
4. Cook for 10 minutes.
5.Bake at grill for 5 minutes until it is golden brown on top.
