Bacon meat pie: crispy and tasty!

Crispy, salty and fatty, bacon is the ultimate ingredient that takes any recipe over the top!
INGREDIENTS

2 lb bacon
1 chopped onion
4 minced garlic cloves
1 tbsp fresh thyme
4 cups grated cheddar
5 potatoes, unpeeled
1/2 tsp dried thyme
Salt and pepper to taste
METHOD
2. Line the spring form with parchment paper.
Put the bacon in the form, let the ends hang.
5. Season bacon with pepper, then sprinkle with a few tablespoons of grated cheddar.
6. Slice the potatoes about 0.5 cm thick.
Arrange them in the baking form until the bottom is evenly covered.
Season the potatoes with salt and pepper. Mix the onion, thyme and garlic and alternate with potatoes.
Continue with a layer of grated cheese. Cover with another layer of potatoes, tightly pressing it, before continuing with alternating layers of potatoes, onion mixture and cheese until the pan is full. Continue with more layers, making them a little smaller each time. Fold the overhanging bacon over the potatoes.
Put the cake in the oven and bake for 3 hours at 180°C/350°F.
Let the cake stand for fifteen minutes, then gently cover with a plate and turn it over.
