Sushi balls

Ingredients:
200 g (7 oz) cooked and seasoned sushi rice;
1 avocado, thinly sliced;
5 strips bacon;
3 soft boiled eggs.

Instructions
Preheat your oven to 180C/350F. Place bacon strips over parchment covered baking sheet and bake for 10 minutes. Remove, leave to cool down then chop finely.
Spread 1/3 of cooked rice over a piece of plastic wrap. Add sliced avocados on top and cover with another sheet of plastic wrap.
Flip a sheet of rice and avocado in a small bowl to make avocado the bottom layer. Remove the top layer of plastic wrap.
Add some chopped bacon, an egg and gather the sides of plastic wrap together. Form a ball, remove plastic and repeat with leftover ingredients.
