Sushi pizza

Ingredients:
2 cups sushi rice, cooked, seasoned;
2 sheets nori;
90 g (3 oz) salmon, thinly sliced;
cucumber, avocado, sliced;
sliced scallions, soy sauce for serving.

Instructions
Brush one (a bit narrower) side of nori sheet with water. Place another sheet on top and press with fingers to stick them together.
Spread cooked sushi rice on top all the way through.
To make “pizza crust rim” place thinly sliced cucumber, avocado and fish on one side and roll like a regular sushi roll.
Cover “pizza crust” with sliced salmon, decorate with cucumbers, avocado and scallions. Serve with soy sauce.
