Baked Breakfast Cups

Ingredients:4 Slices Sandwich or Toast Bread.
4 Slices Bacon.
4 Cherry Tomatoes.
4 Eggs.
Black Pepper.
Chives (optional).
Instructions:
Push the bread into individual pots in a muffin tray (you may need to oil depending on your tray).
Next lay the bacon around the bread ‘cup’ you have just made.
Cut your cherry tomatoes into quarters and add to the base of each cup.
Crack an egg into each cup.
Add a pinch of black pepper to each egg yolk.
Bake in the oven at 180°C or 350F for 17-20 minutes.
Sprinkle with chives to serve.
