How to make the perfect fried shrimp

Ingredients:12 tiger shrimps;
2 tbsp cornstarch;
4 tbsp water;
1 egg;
½ cup flour;
2 cups panko breadcrumbs;
vegetable oil for frying;
tartar sauce or any sauce of choice for serving.
Instructions:
Start by peeling the shrimps. Remove pointed shell from the tail. Remove leftover shell leaving the last section near the tail intact. Remove the vein using toothpick.
To get rid of the fish smell season shrimps with a little pinch of salt, add cornstarch and water (3 tbsp), mix and rinse under the cold water. Dry shrimps with paper towels.
Cut the tip of the tail and squeeze excess liquid from it. Make cuts along the prawn’s stomach, lightly press shrimp to the working surface to break muscles and prevent it from curling while frying.
Whisk egg with 1 tbsp water.
Dredge shrimp in flour, dip into beaten egg and cover with breadcrumbs. Repeat egg and breadcrumbs coating for an extra crunch.
Heat vegetable oil to 180 C (350 F). Fry the shrimps for 2-3 minutes or until golden on the outside. Transfer onto paper towels to remove excess grease.
Serve immediately with your favorite sauces.
