Potato bombs: hot, stringy and tasty!

INGREDIENTS400g boiled potatoes
salt
pepper
70g Parmesan cheese
80g ham
parsley
1 egg
beaten egg
breadcrumbs
DIRECTIONS
Boil the potatoes and mash them, add salt, pepper, ham cut in cubes, parsley, an egg, and the Parmesan cheese. Mix well.
Roll the mixture into balls and place a mini mozzarella (or any cheese you prefer) in the center. Roll each ball in the beaten egg first, and then in the breadcrumbs. Bake at 190°C for 25 minutes. If you want them nice and crispy, add some olive oil on top of each bomb halfway through the baking time.
