Wafer biscuits

Ingredients:
2 cups flour;
¼ cup warm milk;
½ package dry yeast;
½ cup sugar;
a pinch of cinnamon;
a pinch of salt;
120g (4 oz) butter;
1 egg;
whipped cream.

Instructions
Mix dry yeast with milk and a pinch of sugar. Set aside.
Combine cold butter with flour, salt, cinnamon and sugar to make crumbs. Add beaten egg and yeast solution.
Knead the dough until smooth (adding extra flour if needed) and set aside for 45 minutes.
Make 8-10 balls and cook each one in waffle iron until golden (time depends on your waffle iron).
Cut out each waffle with cookie cutter to make perfect circle.
Spread cream on top of one wafer cookie and cover with another one. Sprinkle with some icing sugar before serving.
