Zucchini and sausage skewers: the second dish very quick to prepare!

INGREDIENTS
3 zucchini (medium size)
480g of sausage
120g of cheese
Breadcrumbs
Extra virgin olive oil

METHOD
- Rinse the courgettes, remove the ends, and cut them into thin slices (possibly with a mandolin or potato peeler).
- Remove the meat from the sausage, mix it lightly with your hands in order to obtain a homogeneous mixture, and form balls of more or less the same size.
- Cut the cheese into small cubes and place a small piece of cheese in the center of each ball (meatball) of sausage
- Wrap each meatball with the slice of courgette. Skewer 4 on each wooden skewer.
- Pass skewers in breadcrumbs, arrange them in a pan lined with baking paper, and add a few drops of extra virgin olive oil to the surface.
- Bake in the oven at 200°C/392°F for 20 minutes.
