Syrniki: the Russian pancakes to serve on special occasions!

INGREDIENTS
450g (2 ¼ cups) feta cheese
20g (2 tbsp) semolina
1 egg
75g (5 tbsp) sugar
10ml (2 tsp) vanilla extract

METHOD
  1. In a bowl add feta cheese, egg, semolina, sugar, and vanilla sugar. Mix it all well and let it rest for 20 minutes.
  2. Divide the dough into circles and fry them.
  3. Bake on 360F/180C for 5-10 minutes.
  4. Serve with powdered sugar and berries.
