Soft lemon cookies: the recipe to try!

They are not the usual cookies, you'll fall in love with this recipe!

INGREDIENTS

1½ cups flour
½ tsp baking powder
Salt
1 egg
110g butter
1 cup sugar
2 tbsp lemon juice
Lemon zest
4 drops yellow food coloring
½ cup of icing sugar

METHOD

Add salt and baking powder to a bowl with flour and mix. Put butter at a temperature in a bowl, add sugar and whisk. Add an egg and lemon zest. Squeeze a lemon, and add the lemon juice to the butter mixture and whisk
again.
Gradually add the flour mixture to the lemon mixture. Add the drops of yellow food coloring and mix again.
Cover with cling film and refrigerate for 30 minutes.
Use an ice cream scoop to form a ball of cookie mixture, coat it with icing sugar and place on a baking sheet.
Bake for 14 minutes at 176º C (350ºF).
