Chicken and eggs skillet: perfect for a delicious and energetic breakfast!

Here's an easy recipe to boost your energy naturally with breakfast.
INGREDIENTS

1 large chicken breast, boneless, skinless;
1 egg;
Salt and pepper to taste;
1 ½ tbsp dark soy sauce;
¼ tsp ground ginger;
2 tbsp cornstarch;
1 red onion;
4 eggs;
Vegetable oil for frying.
METHOD
- Slice chicken into bite-sized pieces. Add one egg (you can add one extra white to make it more delicate), salt, pepper, ginger, cornstarch and soy sauce. Mix to combine.
- Heat vegetable oil on medium heat. When the pan is hot, place chicken pieces on it and fry for around 4 minutes, turning halfway though.
- When chicken pieces get brown and crispy, remove them onto another plate and add chopped onions. Cook for 4-5 minutes, until soft and golden.
- Add chicken back into the pan, pour 4 eggs on top and lower the heat. Cook covered for 6-7 minutes until whites are fully set.
- Serve topped with chopped parsley and some chili flakes.
