INGREDIENTS
Raspberry Layer :
3 oz Raspberry jello
1 cup boiling water
1/2 cup cold water
1 1/2 cups whipped cream
Chocolate Layer :
1/2 cup half and half milk
2 packets unflavored gelatin
2 cups cold water
1/2 cup unsweetened chocolate chopped or chocolate chips
2/3 cup granulated sugar
METHOD
In a bowl mix boiling water and gelatin and stir slowly until dissolved, add in cold water. After 5-7 minutes add in whipped cream.
Place a muffin tin on a work surface. Set 3 glasses on the diagonal in the cups.
Pour the mixture into each glass. Transfer to the fridge to chill for at least 2 hours.
In a saucepan add half and half milk and gelatine after 2 minutes add in cold water, chocolate and sugar.
Place over medium-low heat and cook for about 8-12 minutes. Let it cool completely. Pour the chocolate mixture into glasses. Chill at least one more hour and add rasberry and mint on top.
