3 tasty recipes using cabbage!

Cabbage burritos:
Ingredients:
3 cabbage leaves, steamed or boiled;
3 tbsp olive oil;
3 shallots, thinly sliced;
500 g (1 pound) minced beef;
1 tbsp taco spice mix;
1 ½ cup tomatoes, chopped;
1 cup corn;
1 cup cheese, shredded;
½ bell pepper, chopped.

1 ½ cup tomatoes, chopped;
1 cup corn;
1 cup cheese, shredded;
½ bell pepper, chopped.
Instructions
Preheat your oven to 180C (350F).
Heat olive oil and sauté shallots, corn and bell pepper together for around 5 minutes (or until softened).
Add minced beef and break it down with a spatula. Cook for 10 minutes, drain any excess liquid. Add tomatoes, seasoning and stir to combine.
Fill cabbage leaves with minced beef and veggies, top with cheese and roll tightly.
Bake for 10 minutes, cut in half and serve right away.

Cabbage Rolls:
Ingredients:
6 Large outer leaves of Savoy Cabbage
1 Tbsp Cooking Oil
50g Finely Diced Onion
400g Ground Beef
100g Diced Scamorza Cheese
80g Diced Salami
40g Grated Parmesan Cheese
1 Tsp Cumin
1 Egg
To Top:
30g Butter
10g Parmesan Cheese
Instructions:
6 Large outer leaves of Savoy Cabbage
1 Tbsp Cooking Oil
50g Finely Diced Onion
400g Ground Beef
100g Diced Scamorza Cheese
80g Diced Salami
40g Grated Parmesan Cheese
1 Tsp Cumin

To Top:
30g Butter

Blanch the Cabbage leaves in boiling water for 2 minutes then allow top drain and cool before cutting out the woodiest bit of the stalk.
Heat a pan over a medium heat and fry off the onion in the oil until golden.
Add the beef and season with salt and pepper, turn up the heat and cook until nicely browned.
Remove from the heat and cool.
Place the cooled beef in a bowl and mix with the Parmesan cheese, cumin, Scamorza and Salami and egg.

2 tbsp balsamic vinegar
1 cup water
1/2 cup parmesan cheese
1/2 cup shredded cheese
500g ground pork
500g ground beef
½ cup jasmine rice
⅓ cup parsley
1 onion
2 cloves garlic
1 egg
Salt&Pepper
1 tsp cinnamon
2 tbsp brown sugar
2 tbsp balsamic vinegar
1 cup water
1/2 cup parmesan cheese
1/2 cup shredded cheese
500g ground pork
500g ground beef
½ cup jasmine rice
⅓ cup parsley
1 onion
2 cloves garlic
1 egg
Salt&Pepper
Preparation:
Put a cabbage in a large pot of boiling salted water, blanch the cabbage leaves for about 3 minutes. Remove the leaves from the boiling water and immediately put them in the bowl of cold water. Let drain completely.
Mix the crushed tomatoes, ground cinnamon, brown sugar, balsamic vinegar and water. Mix until combined
Pour ¼ of the sauce in the bottom baking dish
Combine the ground pork, ground beef, rinsed jasmine rice, parsley, onion, garlic, egg, black pepper and salt. Mix until well combined.
Scoop out 2 tbsp of the meat mixture, and roll it into an oval cigar shape between the palms of your hands. Place the meat oval horizontally on a cabbage leaf near the base. Fold the sides of the cabbage leaf over the meat and roll like a burrito. Place in the prepared baking dish
Pour the remaining tomato sauce over the top of the cabbage rolls.
