Who knew puff pastry could be so beautiful!

Crocodile leaf:
INGREDIENTS
puff pastry
500g cod
250g cooked potatoes
100g of carrots
100g peas
80g bread crumbs
50 g grated cheese
1 pinch nutmeg
salt
pepper
2 sprigs thyme
olive oil
1 egg

PREPARATION
Boil the potatoes with the skin on, cook for 30-40 minutes.
Sauté the peas and carrots in a pan with a pinch of salt and a few thyme leaves
Chop the fish: use deboned fillets, cut into small cubes.
Grate the potatoes, add the carrots, peas, fish, grated cheese, grated nutmeg, a pinch of thyme, a pinch of salt and the bread crumbs.
Roll out the dough to a thickness of 2-3 mm, about 50 cm long by 30-35 cm wide.
Cut like in the video and add fish mixture, form a crocodile and brush with egg
Bake at 350°F/180°C for 45 min

6 slices bacon;
1 small onion, chopped;
¼ cup béchamel sauce;
1 head brie;
1 egg yolk.

Instructions
Roll out half of the puff pastry and cut out a circle.
Place a head of brie on top of the circle and cut as shown on the video. Make small cuts on the sides ad fold on top of the brie. Use leftover dough to make a rose bud. Place it in the middle of the cheese.
Roll our another half of the pastry, cut out a circle and divide it into 5. Make cuts on each piece as shown on the video.
Cook bacon and onion until golden and crispy.
Place some béchamel in the middle of each triangle. Top with crispy bacon and onion.
Fold pastry on top to cover the filling completely from each side.
Make a star using stuffed triangles and placing brie in the middle. Cover with beaten egg yolk.
Bake at 200C (400F) for 20 minutes.
Roll out half of the puff pastry and cut out a circle.
Place a head of brie on top of the circle and cut as shown on the video. Make small cuts on the sides ad fold on top of the brie. Use leftover dough to make a rose bud. Place it in the middle of the cheese.

salt and pepper to taste;
2 round blocks of cheese;
1 egg yolk.

Cover pan with another sheet of pastry, pinching it at the edges and gently pushing it down the sides of cheese star.
Beat eggs with cream, parsley, onion, bacon, tomato and season with salt and pepper.
Pour the mixture in the center of the tart. Brush sides with beaten egg yolk.
Bake for 30 minutes. Serve right away, while cheese is still melted.
