Chicken and Avocado Roulade: a recipe for a yummy dinner!

Ingredients:
2 avocados, peeled and pitted
2 Tbsp red onion chopped
2 tsp lime juice
1/2 tsp cumin powder
1/2 tsp garlic powder
1/4 tsp salt
1/4 tsp black pepper
1 1/2 Tbsp heavy cream
4 (4 oz) thin chicken cutlets
1 cup Italian seasoned breadcrumbs
2 eggs, lightly beaten

Method:
1.Preheat oven to 450 degrees. Coat a small baking dish lightly with cooking spray.
2.Add avocado, onion, lime juice, cumin powder, garlic powder, salt, pepper and heavy cream to a medium bowl. Mash mixture together until smooth with a potato masher or a fork.
3.Using a meat tenderizer, flatten chicken cutlets between sheets of plastic wrap until thin.
4.Top the chicken with the avocado mixture on one side of the cutlet. Roll up from the long side, shaping the chicken into a log. Repeat with remaining filling and cutlets.
5.Secure the chicken roulades with toothpicks on both ends of the logs.
6.Brush chicken roulades with beaten egg and coat in seasoned breadcrumbs.
7.Add roulades to the greased baking dish. Bake for 25 minutes, until the chicken is cooked through.

Serve immediately.
